Zucchini Parmesan Balls

2 zucchini

1 egg

1 tablespoon of grated parmesan

1 spoonful of flour  (you don’t need much – just enough to get the right consistency.  I used coconut flour because I had it)

Grate the zucchini and add the other ingredients.  Roll into balls and cook on a baking sheet for 20 minutes at 220 degrees.   This only makes a 1 balanced block so add some more protein and vegetables to your meal with maybe a piece of fruit or a glass of wine to make a 2 or 3 block meal.

Another delicious treat I came across as a nibble was lychees (drained) and filled with blue cheese (runny is good) and a walnut stuck in the top.  Sounds weird but has proved very popular with my friends that I have tried it on.  Thanks to CK whose recipe I filched!

Another nibble idea:  I make a salmon pate with tinned salmon, cottage cheese, a squeeze of lemon and some pepper.  The trick is to serve it on sliced telegraph cucumber rather than crackers and put a caper or piece of gherkin on top.  Quick, easy and healthy.
